In my family we love delicious recipes and this red cabbage recipe is a winner. My mum taught me how to get it right and now I’m passing on a treasured family recipe for your family to enjoy as much as mine does.
One firm red cabbage finely sliced.
2 finely chopped onions.
1/2 a tablespoon salt or more if you prefer.
1 tablespoon lard.
250 gm or half a pound lean bacon rashes chopped.
1 1/2 pints- 3 cups apple sauce.
2 teaspoons sugar.
1 tablespoon plain flour.
1/2 a cup white vinegar.
1 cup water.
In a very large pot slowly melt the lard, add chopped onions and bacon and brown till golden in colour.
Add the sliced cabbage and stir till the cabbage is covered in the lard.
Add all the other ingredients and simmer on a low heat for 90 minutes if you like it firm 60 minutes.
This recipe is traditionally served together with beef olives and boiled potatoes, it also goes well with beef stew.It is a great dish served together with a beef or pork roast.
